The Heart of the Home

As with most cultures around the world, the heart of the home in Morocco is to be found in the kitchen. The traditional Moroccan kitchen may be devoid of fancy appliances, but with a humble gas bottle stove and a few pots and pans, wholesome and delicious meals are cooked up daily.

Breakfast varies from a modest offering of fresh bread with olive oil and triangle of 'laughing cow' cheese, to a veritable feast of pancakes, eggs, jam, cakes and fresh orange juice, always accompanied with sweet mint tea. For lunch or dinner the iconic tagine is a one-pot dish richly flavoured with spices and fruits such as saffron, cumin, ras el hanout, preserved lemon, prunes and olives.

On Fridays it is traditional to serve couscous topped with a mountain of freshly picked, steamed vegetables dressed with caramelised onions and raisins. The table setting is simple and food is shared from a communal dish, reinforcing the sense of family and generous hospitality.
